Ingredients for 3 serves:
- 3 big tomatoes (ripe)
- 2 medium-sized cucumbers
- 3 green peppers
- 2 red onions
- 100 g white brined cheese
- 10–15 black olives
- 1/2 bunch of parsley
- 2 teaspoons cooking oil
- salt and vinegar to taste
Method:
- Cut the onion into thin strips or finely chop it. Remove the seeds of the peppers, cut them in half lengthways and slice them into strips. Peel the cucumbers and dice them together with the tomatoes.
- Combine all the vegetables in a suitable bowl and salt them. Add the cooking oil and the lemon juice.
- Garnish the salad with the olives, the ground cheese and the chopped parsley.
Cooking tip:
A chilli can be added to the salad.
