Russian Salad Halloumi Style E-mail


1½ cups diced boiled potatoes
½ cup boiled white beans
½ cup boiled corn kernels
1 cup boiled peas
1 cup diced boiled beetroot
½ cup boiled diced carrots
1 tablespoon capers
1 tablespoon diced pickled cucumbers
Finely chopped parsley
2-3 cups creamy mayonnaise
1 tablespoon sliced black olives
Salt and pepper
Sliced Halloumi Cheese for garnish


Place all vegetable ingredients into a deep bowl, season with salt and pepper according to taste and stir in half of the mayonnaise.
Place mixture into serving bowl or platter and decorate the remaining mayonnaise on top.
Arrange the Halloumi cheese slices decoratively on the serving bowl or platter.
This tasty and healthy salad is excellent served with grilled meat or seafood.
