Ingredients
Pastry
- 6 cups flour
- ¾ cups oil
- Pinch of salt
- Water as required to form soft dough
Filling
- 1 kilo fresh Anari
- 1 teaspoon cinnamon
- 3-4 teaspoons sugar
- Rosewater
- Icing sugar
- Oil for frying bourekia
Preparation
Prepare pastry by mixing flour and oil with a pinch of salt, add enough water as required in order to form soft dough. Set dough aside to rest, before kneading. Prepare filling by mixing all the ingredients together in a mixing bowl. Open pastry in a large piece and cut in small square forms. Take each little square form and place a tablespoon of filling fold pastry to seal the bourekia, follow the same steps until all filling has been used. Heat oil in frying pan and fry each bourekia until golden in colour. Place the fried bourekia in a platter and dust with icing sugar. This delicious bourekia can be served hot or cold and are a healthy snack that can be served with tea and coffee, or after dinner.
