Ingredients for 4 serves:
- 600g sheep’s/cow’s cheese (white brined cheese)
- 4 tomatoes
- 4 tbsp butter
- 4 eggs
- 4 chilliеs
- ground red pepper to season
Method:
- Fill a bowl with cold water and place the cheese in it. To remove excess salt, leave it to rest for 12 hours.
- Butter 4 earthenware pots. Slice 2 tomatoes and line the bottoms of the pots with them. Add the crumbled cheese and make a well in the middle. Crack an egg into the well. Arrange the thickly sliced tomatoes around it and cover with the lid.
- Place the pots into a cold oven, then set the maximum temperature. Cook for twenty minutes until the egg is set. Serve with one chilli pepper and sprinkle with ground red pepper.
- To spend less time removing excess salt, cover the cheese with hot water. Leave it to rest for 30 minutes, then drain. The dish can also be cooked in a microwave oven. First cover the pot with the lid, and then cook at 700 W for 3 minutes.
