Pancakes E-mail

Ingredients for 11-12 pancakes:

500g flour
600ml milk
1 packet of butter (=125g)
1 tsp sugar
½ tsp salt
10g fresh yeast (=1/3 of the fresh yeast block or 1 packet of dried yeast)
200g of cheese to garnish (white brined cheese)


  1. Break up the fresh yeast in a bowl. Add the sugar and pour in 100g lukewarm milk (37C). Stir well and leave to rest for about 15 minutes.
  2. Sift the flour into a large bowl. Stir in the salt and gradually pour in the remaining milk. Whisk in the milk and yeast mixture. Allow the batter to rise for an hour.
  3. Butter a pan and add a ladle of batter and swirl around the base of the pan to allow the mixture to spread evenly. Cook until bubbles start to appear on the surface. Flip the pancake over and cook the other side.
  4. Serve with cheese or the filling of your choice (e.g. jam or marmalade).
